A deer sausage set for success

A new healthy sausage will safeguard up to 60 jobs in Dundee, it was claimed today (writes James Williamson).
Venison specialists Highland Game, based at the Dryburgh Industrial Estate, said its market share had increased as diners chose to cook at home rather than eat out.

Now, thanks to a “link” with Scottish Slimmers, the firm’s venison sausages are set to hit the shelves in 24 branches of Asda across Scotland.

And, with more product launches in the pipeline, the company could be set to boost its workforce.

Venison contains less than half the fat of beef and around a quarter of that of lamb.

Danish-born founder and managing director Christian Nissen said the link with Scottish Slimmers was an “instant love story”.

“They told us they were looking for a sausage for a long time but we have never been able to find one,” he said.

“Getting our products into the 24 stores is just a start — it will build on our success with other retailers and helps build Highland Game into a sustainable supplier.”

He said the company was “quietly optimistic” about the future.

“We want to demonstrate our success then build up to greater things,” Mr Nissen said. “If we can do that then we can employ some more people and invest in the business. This will safeguard our workers and could eventually lead to more jobs.

“We have sustained our level of business throughout the recession and kept people employed while other companies have had redundancies. We expect to have record figures this year, which is very encouraging.

Highland Game currently employs around 30 staff, rising to almost double that figure during the high season between September and February.
